A Beautiful Salad!


These are the moong beans as I removed them from the pan I sprouted them in

Moong Salad

2 cups sprouted green gram *
4 tablespoons onions finely chopped
1  cup tomato and 1 cup cucumber, chopped
2 tablespoons roasted peanuts
a dash of lemon and salt to taste

Gently mix all the ingredients except for the roasted peanuts in a salad bowl. Keep refrigerated. Mix in the roasted peanuts just before serving.

Serve cold.

*This is speaking of moong beans, found in most any health food store, or place selling dried beans and grains. To sprout beans, soak several hours and then drain, put a damp paper towel into a tray or shallow bowl, put beans there and allow to sit overnight in a warm place. They do not need to be cooked.

This is fabulous if you like “this sort of thing”. It is so very good for you too, but don’t let that  turn you off!
