Corn Salsa, Southwestern Style

 

This recipe is always popular with all ages and is healthy too! You do not have to be real precise with quantities of carious ingredients, but do watch the jalapeņos; their heat varies greatly! (Photo below!)

1 bag good quality frozen corn

6 plum tomatoes, seeded and chopped

1 red bell pepper, finely chopped

1 green bell pepper, finely chopped

1 orange bell pepper, finely chopped

1 large red onion, finely chopped

2 jalapeņo peppers, seeded and minced

1 medium bunch cilantro, chopped fine

1/3 cup lime juice

1/3 cup lemon juice

1/3 cup olive oil

Salt and pepper to taste

 Combine all ingredients and allow flavors to marry several hours. Serve with corn chips!
