Corn Salsa, Southwestern Style |

This recipe is always popular with all ages and is healthy too! You do not have to be real precise with quantities of carious ingredients, but do watch the jalapeņos; their heat varies greatly! (Photo below!) |

1 bag good quality frozen corn 6 plum tomatoes, seeded and chopped 1 red bell pepper, finely chopped 1 green bell pepper, finely chopped 1 orange bell pepper, finely chopped 1 large red onion, finely chopped 2 jalapeņo peppers, seeded and minced 1 medium bunch cilantro, chopped fine 1/3 cup lime juice 1/3 cup lemon juice 1/3 cup olive oil Salt and pepper to taste Combine all ingredients and allow flavors to marry several hours. Serve with corn chips!
