CONFETTI SQUASH

Several medium zucchini squash and or yellow squash

Red bell pepper

Green bell pepper

White or yellow onion

Garlic clove

Parmesan cheese

Salt & pepper to taste

Olive oil

 

Wash, dry and cut squash in ½ to ¾ inch slices longwise and then to about 4” long. Lay on foil lined baking sheet. Chop onion, and peppers into small dices or pieces and place in medium mixing bowl with garlic, cheese, salt and pepper. Pile cheese mixture on top of each slice. Drizzle a little olive oil on each one and bake for about 15-20 minutes in a 350o oven.

 

Just a thought: if the zucchini are beginning to get a little seedy, just scoop them out and then you will have a boat to put your

 filling in!
