Date Nut Bread

A lighter, healthier tea bread, but no less Tas-tea!

1 cup chopped dates

1-teaspoon baking soda

¾ cups boiling water

½ cup sugar

1 egg

4 tablespoons butter, melted

1 and  3/4 cups unbleached flour, or whole-wheat pastry flour

1-teaspoon baking powder

½ teaspoon salt

½ cup chopped nuts 

Place dates and soda in a small bowl; cover with boiling water and allow cooling.

In a large bowl, cream together sugar, egg, and butter. Into this mixture, sift the flour, baking powder and salt, and then continue beating until thoroughly blended. Stir in the date mixture, then the chopped nuts. 

Pour the batter into a pan that has been greased and floured. Use a 9x5 inch loaf pan, if you have one. Bake for 50 to 60 minutes in a medium heat oven, about 350o Fahrenheit. 

Cool in the pan about 10 minutes, then turn out onto a rack to finish cooling. 

Note: This bread is nicer the second day, as the flavors have “married”; slicing is also nicer the second day.
