Rolled Sugar Cookies

1 ˝  cups confectioners. sugar

˝  teaspoon almond extract

1 cup butter

 2 ˝  cups all purpose flour

1 egg

1 teaspoon baking soda

1 teaspoon vanilla 1 teaspoon cream of tartar

Mix the sugar, butter, egg, vanilla and almond extract until creamy. Mix flour, baking soda, and cream of tartar and then blend into creamed mixture. Make several small balls of dough. Roll out dough to about 1/8 to 1/4 inch thick. Cut into desired shapes with well floured cookie cutters. If desired, press colored sugars or sprinkles into cookies. Place cookies onto prepared sheets. Bake at 350 degrees to 8 to 10 minutes, longer results in a crispier cookie. Remove cookies and let cool on a rack.

Royal Icing made with egg whites:

1/2 cup refrigerated pasteurized egg whites

1/2 tsp. cream of tartar

1 pkg. (16 oz.) confectioner’s sugar (about 4 cups)

Preparation

Beat the egg whites and cream of tartar in large bowl with an electric mixer on high speed until foamy. Add the icing sugar gradually, beating on low speed until well blended after each addition. Beat on high speed 5 minutes or until stiff peaks form.

 

My sister Amy always did heart-shaped cookies for Valentine’s Day; they were always so pretty and tasty. I wonder if she still does …
