Strawberry Raisin Muffins

4 eggs

1 ½ cups sugar

2 cups fresh strawberries

1 ½ cups seedless raisins

½ cup melted butter

3 cups all-purpose flour

¼ teaspoon salt

¾ teaspoon baking powder

¾ teaspoon cinnamon 

Halve the strawberries, or quarter them if they are very large. In a large bowl, combine eggs, sugar, strawberries, raisins and butter. Mix well. In another bowl, mix flour, salt, baking powder and cinnamon together. Gently stir dry ingredients into the moist mixture, stirring only until blended. It will be thick; avoid over mixing to retain the juice in the fruit. Pour into prepared muffin cups, either lined or greased. 

Bake for about 15 minutes at 325o or until a toothpick inserted into the center comes out clean and dry. Remove the muffins from the oven and allow to rest in pan for about 10 minutes before removing. This recipe makes 2 dozen standard-sized muffins.
