Sugarless, Butterless, Eggless Cake

2 cups raisins 2 cups water 1 cup dates 1 orange, chopped, including peel ½ cup olive, or sunflower oil 2 teaspoons ground cinnamon 2 teaspoons vanilla 1 teaspoon ground nutmeg 2 ¼ cups whole wheat flour ½ cup walnuts 2 teaspoons baking soda 1 teaspoon baking powder
Combine raisins, water, dates, orange, oil, cinnamon, vanilla, and nutmeg, then boil for 10 minutes. Let cool. Preheat oven to 300oF. In a separate bowl, combine flour, nuts, baking soda and baking powder. Add the flour mixture to the fruit mixture, and stir just enough to moisten ingredients. Place the batter in a greased 10” tube pan. Bake 60 minutes.
Yield: about 16 pieces.
This recipe is from a Bed-n-Breakfast, Lake Crescent Inn in Robert’s Arm, Newfoundland. Very good dessert or snack. I have made this for a gift for people on special diets, as well. Recipe is not too fussy; have added crystallized ginger, an over-ripe banana, pecans instead. Used dates instead of raisins; very versatile. I first made this recipe in November of 2000. Don't tell them it is healthy; they will enjoy it more!
